Brook & Bull Cellars is a return to Ashley Trout’s roots of varietally driven, nuanced, and intricately
balanced wines, releasing only a handful of cases per year. Sourcing from top vineyard sites, Trout is
able to create wines that reflect her palate and can be appreciated now or aged over the next decade.

Brook & Bull wines are hand-crafted from vine to bottle, made with small lots sourced from carefully
tended vineyards. From alcohol to acid, phenolics to tannin, balance is always our goal. Our reds tend to
age nicely through year eight, while whites and roses trend closer to the three to four-year mark.
Brook trout, much like winemaker Ashley Trout, are native to the east coast whereas bull trout, like our
nation’s best wines, thrive in the Pacific Northwest. Both thrive in the harshest of conditions, much like
