Brook & Bull Cellars is a return to Ashley Trout’s roots of varietally driven, nuanced, and
intricately balanced wines. Sourcing from top vineyard sites, Trout creates wines that reflect
her palate and can be appreciated now or aged over the next decade. Whether it’s conversation
or dinner, these wines will undoubtedly pair well.
Our wines are hand-crafted from vine to bottle, made with small lots sourced from carefully
tended vineyards. Alcohol to acid, phenolics to tannin, balance is always our goal.
Brook trout, much like winemaker Ashley Trout, are native to the east coast whereas bull trout,
like our nation’s best wines, thrive in the Pacific Northwest. Both thrive in the harshest of
conditions, much like the best wine grapes, Brook & Bull Cellars is the confluence. Welcome to
the best of both worlds.
