Meat, cherries and nori, followed by some more
meat. Chili spices of cumin, coriander. Blackberries,
buds and wet garden earth. Robust tannins and great acid
mean this wine will pair with any and every
meat. Decanting is suggested prior to 2020. Very nice
now and will improve and soften for several years in

Brook & Bull Cellars is a return to Ashley Trout’s roots of varietally driven, nuanced, and intricately
balanced wines, releasing only a handful of cases per year. Sourcing from top vineyard sites, Trout is able
to create wines that reflect her palate and can be appreciated now or aged over the next decade. Whether
it’s conversation or dinner, these wines will undoubtedly pair well.
Brook & Bull wines are hand-crafted from vine to bottle, made with small lots sourced from carefully
tended vineyards. From alcohol to acid, phenolics to tannin, balance is always our goal. Our reds tend to
age nicely through year eight, while whites trend closer to the three to four-year mark.
Brook trout, much like winemaker Ashley Trout, are native to the east coast whereas bull trout, like our
nation’s best wines, thrive in the Pacific Northwest. Both thrive in the harshest of conditions, much like
the best wine grapes; Brook & Bull Cellars is the confluence. Welcome to the best of both worlds.
