Molly Dooker The Maitre D’ Cabernet Sauvignon
FROM THE WINERY –WHO IS THE MAITRE D’?
The Maitre D’ was named after Sparky, who put himself through winemaking college as a left handed waiter.
Vibrant and generous; the 2019 Maitre D’ is abundant with juicy red fruit that rolls playfully across the palate. Blackberries, milk chocolate and soft herbaceous notes make this wine deliciously aromatic. Subtle tannins and fragrant oak reside quietly in the background as flavours of plum, cigar box and mocha cream give this wine incredible depth and finesse.
The grapes were grown on the Coppermine Road, Long Gully Road, Ryan Road, Rivers Lane and Gateway vineyards in McLaren Vale. Barrel fermented and matured in 85% American and 15% French oak, using 47%, new 44% one year old and 9% two year old barrels. The required Marquis Fruit Weight™ for the Lefty Series is 65% – 75%. The Actual Fruit Weight for 2019 The Maitre D’ is 67%.
