Ochoa Reserva 2011
Ochoa Reserva is those wines that time dictates. It is an elegant and classic Javier Ochoa wine , round and complex, with intense tannins and with the necessary time in barrel and bottle that comes from an exhaustive selection of grapes in the vineyard.
It all begins in our vineyard in Traibuenas with a selection of grapes (organically grown) from Tempranillo, Merlot and Cabernet Sauvignon . Each grape has a different harvest time and arrives at the winery separately .
Once we have the wine fermented and ready, the Tempranillo ages in new 225L American oak barrels; Meanwhile , the Merlot and Cabernet Sauvignon are aged in new 225L French oak barrels. After approximately 14 months, Adriana Ochoa selects the barrels to bottle Ochoa Reserva.
Once the wine is bottled, we store it for a minimum of 5 years in our cellar , during which time it rests, rounds off, softens and becomes a jewel to drink on good occasions. This wine has many fans all over the world, since it is one of the wines that leaves our cellar abroad the most. Highly recommended!
